Oatmeal with Blueberry Juice and Plums

Ingredients

  • 2 cups blueberry juice
  • 2 ½ cups water
  • 2 cups rolled oats
  • Pinch of no salt
  • 2 dark purple plums sliced
  • 2 tbsp peanut butter
  • ¼ cup walnuts
  • 2 tsp of agava syrup

In a medium saucepan, bring the water and blueberry juice to a boil. Turn the heat down to low and add the oatmeal and No Salt. Cook stirring occasionally for about 5 minutes until the oats are tender and have absorbed most of the liquid.

Add the sliced plums, peanut butter and walnuts and agava syrup and stir to incorporate evenly. If the oatmeal is too thick, add a splash of blueberry juice.

Makes 4 servings
